			<content:encoded><![CDATA[<p>Yellow tea is a variety of green tea, and it is renowned as the “royal” tea of China.  Like green teas and black teas, yellow teas are not subject to special growing or harvesting.</p>
<p>All green teas go straight from the harvest to a process that the  tea industry calls the “kill-green.” The “kill-green” process stops all oxidization at the desired level.  Black teas get a lot more special treatment, as they are wilted, then bruised, and then allowed to turn black in the air as they oxidize, while green tea and yellow tea receive none of this processing.<span id="more-1294"></span></p>
<p>The yellow tea leaves then get a special moist reheating, in a closed container.  This reheat causes the leaves to develop their unique greenish-yellow color.  The flavor of yellow tea is variously described as earthier and more mellow than the astringent green and black teas, although not as sweet as some black or white teas.</p>
<p>In China, yellow tea is definitely a luxury item, and is priced accordingly.  In the common language, any tea served by the Royal Court is yellow tea!  In practice, however, yellow tea is usually defined by the location of its growth.</p>
<p>In the center of China, in the province of Hunan, there is a large lake called Dongting Lake, famous for the tea leaves grown on one island near the center of the water on Junshan Island.  The tea grown there is called Junshan Yinzhen tea, or “Silver Needles of the Gentleman Mountain.&#8221;  This yellow tea is considered to be one of the best in China.</p>
<p>We can get a real appreciation of the role of tradition in China when we look at the tea industry.  There is a popular and completely unofficial list of teas called the Chinese Famous Teas, and the teas on this list differ on almost every source.</p>
<p>There is only one item that has the same position on each list – longjing tea, a green tea from the coastal province of Zhejiang, is always the first!  The culture has obviously passed its verdict.  Yellow teas, however, are not prominent on most the Chinese Famous Teas compilations, and Junshan Yinzhen tea is the most prominent yellow tea listed.  The popular tradition does not embrace the “royal tea is better” principle!</p>
<p>Tea makers in China, however, rarely employ grading and certifications of quality and fraudulent labels are common, even in the case of yellow tea.  Shoppers in China are best served by noting local traditions, instead of checking for “official” labels.</p>
<p>The system is improving in recent decades, however, as the producers of top-quality teas are beginning to provide careful labeling and certifications of their products.</p>
<p>The most carefully labeled yellow teas generally are the Junshan Yionzhen from Junshan Island in Hunan Province, and the Huoshan Huangya yellow tea from Mount Ibo in Anhui Province.</p>

			<content:encoded><![CDATA[<p>When dealing with pu-erh tea, we are dealing with the “fine wine” of China!  There is the same intense devotion of the lovers of the beverage, the same labyrinth of grading and certification, the same conflicts over the best soil, the best leaves, the best methods of processing, the best way to serve the brew.</p>
<p>Pu-erh also can benefit tremendously from careful aging.  It is variously spelled as “pu’er” and “pu-erh,” and is sometimes known as bolay tea among the Cantonese Chinese.  Pu-erh tea is almost always sold in the form of compressed bricks of tea, in several sizes and shapes, from oval balls to perfect cubes weighing anywhere between 10 and 2000 grams.<span id="more-1292"></span></p>
<p>While some pu-erh tea is manufactured in counties of Guangdong and Hunan provinces, almost 90 percent of pu-erh tea is made in Yunan Province, bordering the nations of Myanmar, Laos, and Vietnam in the mountains that give birth to the Mekong River.  In the 1600’s the Chinese government set aside six mountains to specifically grow the tea trees used in pu-erh tea.</p>
<p>Pu-erh tea leaves go through the same treatments as green tea until the stage of drying is done.  Then, the green tea that is intended for pu-erh production is separated out.  It is referred to a “maocha” at this point.  Depending on the intended market, the maocha might be allowed to sit and age in a loose state, called “raw pu-erh.”</p>
<p>It might also be compressed and allowed to age in that condition, as “ripened pu-erh.”  Some bricks have been stored for hundreds of years!  Ripened pu-erh that has aged undergoes a process of fermentation that creates to the true flavors of the pu-erh  tea, and for this reason, pu-erh is often describes as a “post-fermentation” tea.</p>
<p>There is a relatively new technique called “wet piling” that can be applied to ripened pu-erh, which duplicates the aging process and ensures a fermentation of the leaves.  Wet piling is not considered an illegitimate method of manufacture in China, but it is significant that pu-erh tea fermented by natural aging still brings a much higher price in the marketplace.</p>
<p>Pu-erh tea is beloved for its dark red color and earthy flavor.  It can be completely free of the astringent quality of almost all other teas.  Good pu-erh is clear and fragrant.  The sweetness of pu-erh can be strong or light.</p>
<p>It is often used for several brewing, with the first steeping considered to be inferior to the second and third.  Traditional Chinese Medicine posits that pu-erh tea is a fine treatment for weight loss.  Modern studies indicate that pu-erh tea is an excellent material for lowering LDL cholesterol.</p>
<p>Because gourmands of tea will pay top prices for aged pu-erh tea, there is a considerable problem with certification in the market.  Fraudulent labels are common.  Many factories that specialize in Pu-erh production are taking steps to combat this problem, adding multiple micro labels to assure their customers of quality and source.</p>
<p>You can fid legitimate cakes of pu-erh that are 50 years old, and there are even some bricks that date to the Ming Dynasty still for sale at thousands of dollars!</p>

When we enjoy tea, we generally enjoy the treated leaves of the Camilla Sinsensis plant, a drink discovered in Southeast Asia and cultivated for thousands of years.  Herbal teas also have a ancient and interesting history.</p>
<p>Any student of medicine will point out that throughout the world, healers have gone into the wilderness to find plants that can ease the illnesses of mankind, or to create wonderful drinks for the sheer pleasure of their favors.  What these healers found was a treasure trove of botanical materials that give us wonderful drinks and restorative medicinal brews.<span id="more-1290"></span></p>
<p>To understand the role of herbal teas in medical history, you should know that modern science is still carefully evaluating its relationship with the ancient knowledge of Traditional Chinese Medicine, abbreviated as TCM.  The thinking of healers in China is very well-documented and very different from Western scientific thought, but there have been numerous instances of Chinese medical practices being able to serve patients as well as and occasionally better than Western medicine.</p>

<p>Many practitioners of herbal medicine consider herbal teas as a therapy applied in a general way, and not as a prescribed ingredient.  For the herbal healer, the benefits of chamomile tea are evoked as much by the ceremonial sipping of the drink just before bedtime as much as by the simple ingestion of its ingredients.</p>
<p>There is a counterbalancing need to understand all the exact effects of various plants, of course, as anyone who has heard of hemlock understands!  In the making of herbal teas, medicine, flavor and ceremony all come together, and the practice of herbology ensures that these wonderful brews always enhance our lives through their healthy and flavorful characteristics.</p>
