			<content:encoded><![CDATA[<p>Okay, so these two recipes are from my favorite site and yes, they are my favorites to make. I can make the Vegetarian Minestrone early in the morning, let it cook, let it smell my house up with goodness. Then after it&#8217;s done I can make the Baked Apples and let that cook, and let that fill my home up with even more goodness. Mmmm, I&#8217;m getting hungry just typing this right now.</p>
<p>Okay, without further adue&#8230;</p>
<p><strong>Vegetarian Minestrone</strong></p>
<p>1 medium onion, chopped<br />
2 medium carrots, thinly sliced<br />
2 stalks celery, cut into 1/2 inch pieces<br />
1 red bell pepper, seeded, cut into 1/2 inch pieces<br />
1 medium zucchini, scrubbed, sliced into 1/2 inch rounds<br />
2 cloves garlic, minced<br />
2 14 1/2 oz. can vegetable broth<br />
1 28 oz. can crushed tomatoes<br />
2 15 1/2 oz. cans kidney beans, drained<br />
2 tsp. dried marjoram<br />
1/4 tsp. coarsely ground black pepper<br />
1 1/2 cups cooked rice<span id="more-970"></span></p>
<p>Add all ingredients except rice to crock pot. Cover and cook on low 8 to 10 hours (high 4 to 5 hours). Add cooked rice and stir to combine. Serves 8 guests. Then transform it into a seperate bowl (unless you have another pot to go into the crock pot) and get ready to make dessert&#8230;.</p>
<p><strong>Baked Apples</strong></p>
<p>6 medium or large apples<br />
4 tbs peanut butter<br />
1 tbs cinnamon</p>
<p>First take out the core of the apples. Then combine the peanut butter and cinnamon together. Whipped peanut butter seems to work best. Fill the cores with the peanut butter and cinnamon mix and place the apples in the Crockpot on a low setting for about 4 hours. Once finished, the apples can be eaten whole or cut up in pieces.</p>
