Slooooow Cookin’ At It’s Finest
Okay, so these two recipes are from my favorite site and yes, they are my favorites to make. I can make the Vegetarian Minestrone early in the morning, let it cook, let it smell my house up with goodness. Then after it’s done I can make the Baked Apples and let that cook, and let that fill my home up with even more goodness. Mmmm, I’m getting hungry just typing this right now.

Vegetarian Minestrone
1 medium onion, chopped
2 medium carrots, thinly sliced
2 stalks celery, cut into 1/2 inch pieces
1 red bell pepper, seeded, cut into 1/2 inch pieces
1 medium zucchini, scrubbed, sliced into 1/2 inch rounds
2 cloves garlic, minced
2 14 1/2 oz. can vegetable broth
1 28 oz. can crushed tomatoes
