Still, the Crockpot – while a great and versatile cooking tool – is not as user friendly as the oven or microwave. Chicken Fricassee

This is a simple recipe, it only takes say 30-45 minutes prep time and it cooks in 4-5 hours, but the longer you keep it cooking the more flavor you have. Do not let the prep scare you it is simpler that it sounds. I am just trying to be through, and well defined, so that is it well understood.

Ingredients:

Cut veggies as described below

1 large whole Onion

2 bunches of Green

1 bunch Parsley (cut these with kitchen scissors)

1 Green Pepper

1 Jalepino Pepper

Set this aside for later

1 chicken leg and thigh (per person)

1 ½ cup oil

1 cup flour

1 Tablespoon Hungarian Paprika

(this has more flavor, less heat, it is also darker in color)

Salt and pepper to taste

1 Tablespoon of chicken seasoning

2 cloves garlic or 2 Tablespoons garlic in a jar

2 Cups of Water

During the fall and winter months, I enjoy making hearty soups and stews in my crock pot for my family. I love the fact that I can spend a few minutes in the morning preparing it, put it into the slow cooker and walk away…a few hours later, our dinner is hot and ready to enjoy.

The following recipe was given to me by my 83 year old great aunt about 25 years ago. To this day, I still enjoy making it for my family. If you don’t like okra, you can certainly omit it from the recipe. At times, I have actually substituted the okra with some fresh green beans or green peas, and the stew was just as delicious. I was walking through the aisles of the grocery store a couple of days ago, and I noticed the increase in prepackaged slow cooker meals. I already know the rewards of using a slow cooker because I’ve been using mine for years, so it came as no surprise to me when others started talking about the advantages of cooking with a crock pot but why did it take the rest of the country so long to find out? But even with this increase in popularity, I’ve recently been asked by a few “newbies” “Is slow cooking really that great?”
