Back in July and August our blackberries finally came into season. I made a lot of jam, jellies and desserts using fresh blackberries. I also spent some time freezing some of my berries so that I could use them this fall.

When it comes to making a homemade chocolate chiffon pie, this recipe is one of the best that I have tried. What I really like about this one is the light and fluffy consistency to it and just the right amount of chocolate flavoring.

When it comes to crock pot cooking (using a slow cooker), I enjoy using mine all year long. One of the recipes I enjoy making in it are Cabbage Rolls, which are also known as Pigs In A Blanket.

This recipe does take some preparation time, but is well worth your efforts.

To Prepare Cabbage: Fill a large stock pot with water and bring to a rapid boil. Take the core out of each head of cabbage. Place head into boiling water, cover and cook for 5 minutes, remove from water immediately. With one head, start taking the leaves off, being careful not to tear them. As a busy mom and wife, I am always looking for easy and time saving chicken recipes, and this one fits all of those ‘mom’ requirements.

What I like about this recipe is the fact that it is made with every day ingredients that you most likely have on hand. To save time, I will make step 1 the day before and then refrigerate it in a container. The next day, I will reheat the step 1 ingredients in the microwave for 1-2 minutes and then proceed with step 2. Back in the early 1980′s my grandmother spent a Saturday afternoon teaching me how to make her banana spice cake. I am not sure why they call it sea-foam frosting, but I can tell you…it does taste delicious!

When it comes to making chocolate cakes, I often times get bored with the classic ones. I look for recipes that have a twist or some added goodies to them.

This one is really easy to make and I love the rich chocolate flavor along with the miniature marshmallow topping. You can frost the cake with your favorite frosting, although we prefer ours with chocolate. There have been times that I have forgone the frosting and just dusted it with confectioner’s sugar. When it comes to summer picnics, two of the classic foods that come to mind to me are great tasting macaroni and potato salads. I don’t think any summer picnic would be complete without them.

During the fall and winter months, I enjoy making hearty soups and stews in my crock pot for my family. I love the fact that I can spend a few minutes in the morning preparing it, put it into the slow cooker and walk away…a few hours later, our dinner is hot and ready to enjoy.

The following recipe was given to me by my 83 year old great aunt about 25 years ago. To this day, I still enjoy making it for my family. If you don’t like okra, you can certainly omit it from the recipe. At times, I have actually substituted the okra with some fresh green beans or green peas, and the stew was just as delicious. All of these recipes take less than 60 minutes from preparation to serving time. You can make the recipe the day before and refrigerate it for the following day.
