			<content:encoded><![CDATA[<p>I&#8217;m sure every one of us has experienced the situation where unexpected company drops by right around suppertime. You welcome your guests, but in the back of your mind you&#8217;re thinking, &#8220;okay, what will I serve for dinner?&#8221; A great hostess will be able to pull something together in no time, right? So, dinner? No problem, because you always make more than enough. Dessert? Well if you have a Chocolate Candy Bar Pie sitting in your freezer, then you&#8217;ve got that covered, too!</p>
<p>My mother is from Germany and has taught me from little on that a meal isn&#8217;t complete unless you have something sweet to finish it off. Not too great for the waistline but my taste buds say thank you every time.<span id="more-1320"></span></p>
<p>In order to be prepared for impromptu guests or coffee with the girls, I try to keep this great tasting pie in the freezer at all times:</p>
<p><strong>Chocolate Candy Bar Pie</strong>:<br />
<span style="text-decoration: underline;">Ingredients</span>:</p>
<p>1/2 cup milk<br />
1 (4-ounce) chocolate bar with almonds<br />
18 large marshmallows<br />
1/2 pint heavy whipping cream<br />
1 prepared graham cracker crust</p>
<p><span style="text-decoration: underline;">Directions</span>:</p>
<p>In the top of a double boiler (a stainless steel mixing bowl over a pan of boiling water can be used if you do not have a double boiler) melt the chocolate bar, milk and marshmallows.</p>
<p>Whip the whipping cream in a bowl until stiff and fold this into the chocolate mixture. Pour into the crust and refrigerate until cool. When cool, store in freezer until time to serve. At the start of dinner remove the pie from the freezer and set on counter top. The pie should be thawed by the time the meal is over and its time for dessert.</p>
<p>Another great thing about this pie recipe is that it only requires 4 ingredients plus the pie crust and if stored in a freezer container, can be kept frozen indefinitely.</p>

This is a good thing as it makes the grapes decay and contamination proof. Moreover, when the autumn rains start pouring in, they are also protected from damage. These very qualities that Cabernet has made it as popular as the red wine varietal Carignan and Merlot.</p>
<p>Aside from the characteristics mentioned above, another reason why it became so popular was because of the appeal of its very unique flavor and also because it has come to be the collector’s wine. Due to this fact alone, inflationary climb has affected Cabernet Sauvignon since collectors, fans and the newly rich influence its supply and demand as well as its bid upward.<span id="more-1303"></span></p>
<p>And now, we come to the most exciting part of this process of making wine &#8212; DIY part! The instructions in the wine diy process are divided into three parts namely: Crushing, Primary Fermentation, Racking and Aging.<br />
Crushing</p>
<p>1.    In making wine diy style, you must clean the grapes using a garden hose after buying them from the market or picking them from the vineyard. You do this by taking away the stems but you may opt to leave the tiny little twigs.</p>
<p>2.    Produce grape juice from the grapes by stomping on them if a machine is not available to do this process.</p>
<p>3.    What will be left after you stomped on them and gathered the juice is what you call the must. It’s a combination of the grape skins, little twigs and grape juice. Get your first fermenter and pour it all there to get it ready for fermentation.</p>
<p>Primary Fermentation</p>
<p>1.    As part of the wine diy process, you must test your must for acidity. Test its sugar content too. You may use a testing kit that you can buy from a store.</p>
<p>2.    Depending on the results, you will know whether you need to add more sugar or not in your wine diy.</p>
<p>3.    The test results will also be used so you’d know how many Campden tablets you will add on your must.</p>
<p>4.    Seal the must and let it sit for 24 hours.</p>
<p>5.    Add the winemaker&#8217;s yeast into the must. Close it tightly again and let fermentation take place. Every day for one week, stir it twice using a wooden paddle.<br />
Racking  and Aging</p>
<p>6.    In wine diy, strain the must as you pour it from one container to another. This will get rid of the skin and the little twigs. Once you are able to separate the solid stuff from the liquid, the liquid is now what you call your new “green” wine.</p>
<p>7.    Test the acidity of your wine for the second time. If it’s too acidic, add more of any of the following:  spring water (the least preferred choice), potassium bicarbonate, or calcium carbonate.</p>
<p>8.    Get another empty container or vessel or vat and begin siphoning the green wine from its container to the new container. Get an empty vessel and siphon the “green” wine there for aging. Usually, wine makers use oak barrels because of Cabernet’s affinity for oak. However, since oak barrels are expensive, we can do away with just oak chips, around 2-3 pieces, dropped at the bottom.</p>
<p>9.    Tightly seal the vat and look for a cool dark place where you can store it for three weeks.</p>
<p>10.    When the third week is over, you have to compensate for settling by topping off the vessels. The least full vessel must be drained with a siphon hose and then fill up the others. During this procedure, microorganisms may have gotten through so kill them off with a spoonful of sulfite poured on each of the vessel. Use an airlock afterwards to tightly seal each vessel.</p>
<p>11.    There will be some leftover wine from the wine diy pricess. Discard whatever is left because this will just turn into vinegar. If you don’t want to discard it, then just transfer it to a small container.</p>
<p>12.    Wait another 4-6 months before bottling the wine that you put in the</p>

<p>This particular reminder can never be stressed and repeated enough. It is one of the most crucial in all wine directions. Always maintain cleanliness in your workstation whether it be your kitchen, your backyard or wherever it is that you choose to make your own homemade wine. When we say cleanliness, it does not only mean that your kitchen counter or work station must be physically clean like spotless and all that but chemically speaking, it must be clean too! This means, everything must be sanitized including all equipment and surrounding areas. Working in a sterilized area will ensure that no bacteria will come enter or mix with your concoction and airborne yeasts and vinegar flies won’t be around to ruin your mixture and turn it to vinegar. You will know more about this as you go through with the wine making process.</p>
<p>Fermentation</p>
<p>The process of fermentation is the part in wine directions that may be a bit hard to understand at first but really, it’s not that complicated. Putting it in simple terms, it is just yeast feeding on sugar which produces carbon dioxide and alcohol. It is the process of fermentation that will eventually turn your grape juice into wine or alcoholic beverage. There are two types of fermentation that can happen at this stage &#8212; the process of primary fermentation that can take up to 14 days and the process of secondary fermentation that can take up ten more days. <span id="more-1301"></span></p>
<p>As part of our important reminders or wine directions, it is important to take note of the following dos and don’ts:</p>
<p>Dos<br />
-    Like what was mentioned earlier, one of the most crucial of all wine directions is ensuring that all the equipment that you are going to us are clean, meaning, properly sanitized and or sterilized.<br />
-    Your first ferment must be tightly covered.<br />
-    Another crucial part in all wine directions is that during your secondary fermentation, keep away air by sealing your fermenter. This ensures that bacteria and vinegar flies will be kept at bay.<br />
-    Don’t forget to always use the fermentation traps.<br />
-    Wine bottles are kept full which is about ¾ inches of the cork.<br />
-    The alcohol or liquor must be slowly and thoroughly  strained off your must.<br />
-    Instead of making sweet wine right at the start, better make the dry kind first. This way, if you don’t like the way it tastes, you can always add sugar and make it sweet later on.<br />
-    Make sure you are using yeast from a reliable source.<br />
-    Again, like what was mentioned, sugar can always be added at a later time, step by step. Just keep a detailed record of it.<br />
-    Rack twice or thrice which is more preferred by wine makers.<br />
-    When tasting wine, it must be done at intervals.<br />
-    Corks and stoppers must always be sterilized whether they are old one or new ones.<br />
-    Red wines can lose their colors if not stored in dark colored bottles.</p>
<p>Don&#8217;ts<br />
-    Another important of all wine directions is to not try to distill your wine.<br />
-    Forget to keep vinegar flies at bay.<br />
-    Don’t use equipment of resinous wood.<br />
-    Don’t forget to stir a must two times everyday.<br />
-    Don’t put in a lot of sugar at the beginning.<br />
-    Don’t use high temperature just so you can speed up fermentation.<br />
-    be impatient.<br />
-    Don’t leave your wine to sit on yeast that’s dead or sediment.<br />
-    Don’t forget that wines do clear up in time. Don’t rush the process by filtering too soon.<br />
-    Don’t pour your wine in jars or bottles that have not been sterilized.<br />
-    While wine is still fermenting, don’t bottle it just yet.</p>

			<content:encoded><![CDATA[<p>It is a pleasure that goes down to any of their own wine. You may think that wine is a tough job, but you can actually very easily do at home. Before you can start making your house wine is preferable for them to learn what steps are.</p>
<p>To make wine at home, you need either grapes or raisins. If you have a growth area enough, you can choose to grow your own grapes and wine. The use of concentrated grape must, must be specific to the use of high quality only. You can get very high degree of concentration online, or you are looking for home brewing store. Then you get some tools and brewer&#8217;s yeast and wine equipment. Get a whole wine kit instead of doing things one at a time like this is a good idea if you are a manufacturer of the first wine. Making wine can not be your cup of tea and that&#8217;s why you should receive a kit came first, then buy individual pieces of equipment when it is safe.<span id="more-1309"></span></p>
<p>Depending on what you use grape concentrate or can not be between 5 and 8 stages of winemaking. If you are using grapes then obviously the fruit must be harvested first. Do not spare the rod grapes &#8211; Remove carefully. Get the steps that are essential and must be done carefully, because if left even some of them, the tannins in them can give a bitter taste in wine.</p>
<p>When you are sure not to leave a fragment of a single stem, crush the grape skins to juice live outside. This can be done in several ways. Crush the grapes is the preferred method of winemakers. How much grape crush is important because it will influence the final taste of wine. A fruity wine can be obtained if not almost crush the grapes whole.</p>
<p>It is followed by step known as primary fermentation. Then the yeast cells are acting on the sugars in juice and fermented. It converts the sugars into alcohol and carbon dioxide and in some cases, more yeast will be necessary. This ensures a stable and coherent conversion can not be the case if it relies solely on the yeast that is found in fruits.</p>
<p>After primary fermentation, more juice is extracted from the fruit. However, the juice from the second break will not be high quality as the juice extracted before. Because the juice is obtained during grinding, known as the juices drip, had less contact with the stems and skins. However, the juice obtained from pressing process has no value. Large scale wineries use press juice so as to improve its overall production volume.</p>
<p>After pressing, the wine undergoes a secondary fermentation and aging process simultaneously. As a wine producer, has the privilege of deciding how long you want your wine to ferment.</p>
<p>The last step in the process of making wine is bottled. Wine can be added directly in bottles, but you may need to add sulfites in the fermentation process can come to an end which will also act as a preservative in wine. Bottle cap and you&#8217;re done!</p>

			<content:encoded><![CDATA[<p>But this is not about what wine to serve for the big meal. Since the Christmas dinner is not as consistent as the Thanksgiving dinner, it is more difficult to offer suggestions.  Sure, some still roast a turkey, but more and more, people are dining on roast beef, roast pork, ham or, this being Southern California, Mexican dishes are often the norm. <p>This is all about two major issues that come up each Christmas Season.  I am not referring to gifts for the family, but how to handle the wine choices at the company holiday party, for one.  And if you should be so lucky, what wine to serve at the holiday party you agreed to host; the one that sounded like such a great idea when it was planned during Thanksgiving dinner.<span id="more-1307"></span></p>
<p>So here you are at the company Christmas party, or perhaps a friend or co-worker’s home for a cocktail party.  There is little chance that the wine you normally would enjoy will be served.  Thus, you are not surprised when you get there and don’t recognize the wine being served.</p>
<p>What better way to venture off on a different path than when your only other choice is to not drink wine at all?   And this way, you don’t have to spend your own money while you experiment.</p>
<p>Now be honest with yourself – don’t you often say you love to try different wines, and yet stick with your favorites?  This is not the time for a rum and Coke©, this is an opportunity to expand your horizons.  You may be surprised with the results.  This is how I enjoyed my first Pinot Grigio.</p>
<p>So, for you red wine drinkers out there, saunter up to the bar and order a Chardonnay.  And those of you who can’t understand the appeal of red, ask the bartender if he would pour you a small taste of that Central Coast Pinot Noir, and then you may understand why the movie Sideways became so popular.</p>
<p>§</p>
<p>Planning your own party evening presents itself with a whole new set of problems.  You remember what you went through at the party you attended, right?  Well, now the shoe is on the other foot and it is up to you to serve wines that would be worthy of your own palate, yet not break the bank.</p>
<p>Sure, you could go the least expensive route and buy cases of wine that might cost less than a single bottle.  Or fill up with the “sales” from the local warehouse wine outlet who are often offering wines that they have not been able to sell because the big, mass production wine companies made too much.  You may save some money, but nobody will leave your party commenting on your wine choices.</p>
<p>This is not about impressing your friends, but the perfect time to realize that you don’t have to bust the budget on your wine offerings.  With so many great choices available, I could not begin to list them all here.  I am going to try and keep it as simple as possible by offering three <em>types</em> of wine, offering suggestions only for reference.</p>
<p>For starters, a white wine that is easy drinking and blends well with almost anything.  As a bonus, white wines are often less expensive than reds, so you can often trade up and get a nice quality wine for half of what it may cost in red.  You can get great deals from all over the world, with the Aussies and New Zealanders doing great things with Sauvignon Blanc.  If you want to stay with domestic, Hoopla Chardonnay from Napa is a great buy right now, and the white wine lovers will thank you.</p>
<p>Choosing the red wine selection for the evening can be a little trickier.  You may have noticed that I said two red wine choices.  Red wine sales exceed white wine, and it may surprise you, but even among women.  So you need to be able to serve a wider spectrum of tastes, and satisfy them with only two choices, not an easy task.  Here is where you may want to consult with your local wine merchant, and I can’t recommend anyone more highly than these two.  Not only will they give you honest answers, they fully understand the meaning of the word budget!</p>
<p>To get you thinking of some options before you talk with them, let me offer my thoughts.  First, you want a red wine that is easy to drink, light and accessible.  One that immediately comes to mind is Pinot Noir, as mentioned above.  Those from Washington State or the Central Coast of California are always winners.  Forgetting the old days of “Hearty Burgundy”, you could also try original Pinot Noir, the wines from Burgundy, France.</p>
<p>Staying in France for the moment, Beaujolais-Villages wines are also delicious, fruity, easy drinking red wines that fit perfectly in a casual evening party setting.  And for those who like their wines slightly chilled, like most white wine drinkers, Beaujolais can be lightly chilled.  Beaujolais has been called “the only white wine that happens to be red”.  But please, do not mix up this wine with Beaujolais-Nouveau, a wine that is released one or two months after it has been harvested, normally, the third Thursday in November.</p>
<p>The third choice would be a more substantial red wine, the one that your guests would choose after they have tried the others.  Of course there will be those that choose this style first, but that would be there mistake.  By skipping your other choices, they would have lost out on a great opportunity to try new wines.</p>
<p>Here you have even more choices than you think.  Of course Cabernet <a href="http://www.lamaisongourmet.net/r/products/4-bears-sean-minor-cabernet-sauvignon-2006?id=ttgZIR4J">Sauvignon</a> will be on your list of options, and rightfully so.  But this could be used as a time to introduce your friends to wines from other parts of the world.  Both Chile and Argentina offer excellent value in Cabernet, as well as Malbec and Syrah.</p>
<p>In California, winemakers seemed to have discovered the beauty of Syrah.  They have caught up with the Australian’s in that respect.  Sure, the Australian version is called Shiraz, but it is the same grape.  Just be careful, as there is much Shiraz on the market that really should be sold as bulk, or jug wine.</p>
<p>I could go on, because I have not even mentioned the great values coming out of Spain for example.  Or the wines of Oregon, Italy, Germany, South Africa, even Canada.  Heck, I hear the wines from the Niagara Peninsula are great, and I am looking forward to trying the wines from the Finger Lakes region of New York State.  Then there is the emergence of wine growing in Eastern European countries – is anyone ready for a Tokaj wine from Hungary?  Maybe next year!</p>

			<content:encoded><![CDATA[<p>Yellow tea is a variety of green tea, and it is renowned as the “royal” tea of China.  Like green teas and black teas, yellow teas are not subject to special growing or harvesting.</p>
<p>All green teas go straight from the harvest to a process that the tea industry calls the “kill-green.” The “kill-green” process stops all oxidization at the desired level.  Black teas get a lot more special treatment, as they are wilted, then bruised, and then allowed to turn black in the air as they oxidize, while green tea and yellow tea receive none of this processing.<span id="more-1294"></span></p>
<p>The yellow tea leaves then get a special moist reheating, in a closed container.  This reheat causes the leaves to develop their unique greenish-yellow color.  The flavor of yellow tea is variously described as earthier and more mellow than the astringent green and black teas, although not as sweet as some black or white teas.</p>
<p>In China, yellow tea is definitely a luxury item, and is priced accordingly.  In the common language, any tea served by the Royal Court is yellow tea!  In practice, however, yellow tea is usually defined by the location of its growth.</p>
<p>In the center of China, in the province of Hunan, there is a large lake called Dongting Lake, famous for the tea leaves grown on one island near the center of the water on Junshan Island.  The tea grown there is called Junshan Yinzhen tea, or “Silver Needles of the Gentleman Mountain.&#8221;  This yellow tea is considered to be one of the best in China.</p>
<p>We can get a real appreciation of the role of tradition in China when we look at the tea industry.  There is a popular and completely unofficial list of teas called the Chinese Famous Teas, and the teas on this list differ on almost every source.</p>
<p>There is only one item that has the same position on each list – longjing tea, a green tea from the coastal province of Zhejiang, is always the first!  The culture has obviously passed its verdict.  Yellow teas, however, are not prominent on most the Chinese Famous Teas compilations, and Junshan Yinzhen tea is the most prominent yellow tea listed.  The popular tradition does not embrace the “royal tea is better” principle!</p>
<p>Tea makers in China, however, rarely employ grading and certifications of quality and fraudulent labels are common, even in the case of yellow tea.  Shoppers in China are best served by noting local traditions, instead of checking for “official” labels.</p>
<p>The system is improving in recent decades, however, as the producers of top-quality teas are beginning to provide careful labeling and certifications of their products.</p>
<p>The most carefully labeled yellow teas generally are the Junshan Yionzhen from Junshan Island in Hunan Province, and the Huoshan Huangya yellow tea from Mount Ibo in Anhui Province.</p>
