Description

Crisp, tasting corn fritters goes great with barbecue. It is a wonderful dish that has great flavor. A light soy or teriyaki sauce is a great accompaniment to this recipe. Use the freshest corn possible to extract the most intense corn flavors. It is also a great dish to accompany other Asian dishes. Once you try one corn fritter you will have a very hard time not eating many more.

Ingredients

* 1 1?2 lb fresh corn (3-4 ears)
* 1 large egg, beaten lightly
* 3 T all-purpose flour
* 2 T heavy cream
* 1 small shallot, minced
* 1?2 t salt
* cayenne pepper
* 1?2 c corn oil
* 3 T cornmeal

Instructions

1. Using a sharp knife, cut kernels from 1-2 ears of corn and place in bowl to make about 1 cup whole kernels. Grate kernels from remaining ears on large holes of a box grater to yield 1/2 cup.
